Dried Red Chilli whole (Lal Mirch) is one of the largest used spices in many recipes. Chilli is highly effective in reducing weight and lowering levels of cholesterol in the blood stream. It is smooth, elongated and slightly curved in shape and deep burgundy to dark reddish brown in color. Dried Red Chillies are pungent, hot, spicy and smoky and lends a medium heat and vibrant flavour to a dish. Red chillies are dehydrated versions of the ripe (thus red) fruit and tend to have less floral or citrus notes and more smoky and pungent notes in their flavour profiles.
Dried red pepper may be used whole or powdered. India is the largest producer of red chillies. As the name suggests it is red in color and can be consumed as it is or can be broken down and made into a powder. It is really spicy and the intense heat is concentrated in the seeds. Fresh red chillies are milder.
